This refreshing and tasty salad is made with garden-fresh cucumber and juicy-sweet tomatoes, and tossed with a soy-sesame dressing.

Ingredients

1 each english cucumber
cut into 1/2-inch cubes, peeled if desired

2 each beefsteak tomatoes
ripe, cut into 1/2-inch chunks
*
Dressing:
½ tablespoon soy sauce, tamari
or to taste
1 teaspoon rice vinegar
1 teaspoon sesame oil
1 pinch sugar

1 small garlic cloves
crushed, optional
*
2 tablespoons cilantro
freshly chopped
*
red pepper flakes
to taste, optional
*
salt and black pepper
to taste
*

Directions

In a mixing bowl, add the chopped cucumber and tomatoes.

Add all the dressing ingredients directly into the bowl.

Toss gently until well combined. Season with salt and black pepper to taste.

You may adjust the taste with more soy sauce, vinegar or sesame oil.

Serve.

Had some crunchy cucumber and back-yard ripen juicy tomatoes, quickly put this salad together with an easy and tasty soy-sesame oil dressing.

The cucumber and tomatoes were so fresh, so I really didn't need to dress them too much. The salad was refreshing and tasty. A great side dish.
