60 minThis is shrimp pasta with attitude. The shrimp get tossed in Cajun spice and a dusting of flour, then seared hot and fast until they’re crisp and golden, a little crunch you don’t get from the usual soft sauteed shrimp. They crown a creamy, spicy Parmesan sauce tangled through fettuccine.
Cooking it all in one pan is the smart play. After the shrimp come out, chicken broth and heavy cream go into the same skillet, picking up all the spicy browned bits left behind, then Parmesan whisks in to thicken the sauce, no roux required.
The trick is timing the shrimp. Add them back only at the very end, tossed in just before serving, so their crisp, spiced coating stays crisp instead of going soft in the sauce. A creamy-meets-crunchy, mild-meets-fiery plate that eats like restaurant food.
Chef Tips
- Don’t crowd the pan; sear the shrimp hot and fast so they crisp and don’t steam or turn rubbery.
- Build the cream sauce in the same skillet to soak up the spicy browned bits the shrimp leave behind.
- Toss the crispy shrimp back in at the last second so the coating stays crisp instead of softening.
Variations
- Adjust the Cajun spice up or down, and add a squeeze of lemon to cut the richness.
- Stir in sauteed peppers, andouille sausage, or spinach to bulk it into a fuller meal.
