This is the spread that shows up at every Scandinavian holiday table, and for good reason.

Pickled herring in sour cream gets pureed with diced tart apple and white onion into a smooth, tangy spread that’s briny, creamy, and just a little sweet all at once.

No cooking required. Just blend, chill, and serve with dark rye bread, crackers, or crisp vegetables.

It takes 20 minutes to make and tastes even better after a night in the fridge.

Chef Tips

  • Use a tart apple like Granny Smith; sweet varieties throw off the balance with the briny herring.
  • Blend until completely smooth for a spread, or pulse for a chunkier dip with more texture.
  • Let it chill for at least an hour (overnight is even better) so the flavors meld together.

Directions

Purée the herring (sauce and all) in a food processor or blender until smooth.

Add all the other ingredients and continue to process until smooth.

Cover and chill.
