Pickled herring in sour cream gets pureed with diced tart apple and white onion into a smooth, tangy spread that’s briny, creamy, and just a little sweet all at once.
No cooking required. Just blend, chill, and serve with dark rye bread, crackers, or crisp vegetables.
It takes 20 minutes to make and tastes even better after a night in the fridge.

Purée the herring (sauce and all) in a food processor or blender until smooth.
Add all the other ingredients and continue to process until smooth.
