Southern Coke cake made with Coca-Cola in both the chocolate batter and the boiled cocoa-pecan frosting. Marshmallows in the batter melt into gooey pockets as it bakes.

2 hrsCoke cake is a Southern institution, and the cola isn’t just a gimmick. The carbonation adds lift to the batter, the acidity reacts with the baking soda for extra rise, and the caramel-vanilla flavor of Coca-Cola adds a sweetness that plain water can’t match.
Marshmallows stirred into the dry ingredients before the hot cocoa-Cola mixture goes in partially melt during baking, creating gooey, sticky pockets throughout the crumb. That molten marshmallow texture is what makes this cake unlike any other chocolate cake.
Buttermilk adds tang and tenderness to the batter. Don’t beat the mixture. Just stir everything together gently. Over-mixing develops gluten and you lose the soft, almost pudding-like texture.
The frosting gets the same treatment: margarine, cocoa, and Coke boiled together, then poured over powdered sugar and chopped pecans. It sets into a fudgy, nutty glaze.
Kitchen Tips
- Pour the hot cocoa-Cola mixture over the dry ingredients while it’s still hot. The heat starts dissolving the marshmallows immediately.
- Do NOT beat this batter. Stir just until combined. Beating changes the texture completely.
- Cool the cake for 30 minutes before frosting. The frosting needs a slightly warm surface to spread but slides off a hot one.
- Pour the frosting while it’s still warm and spreadable. It sets up fast once it cools.
Variations
- Dr Pepper cake: Use Dr Pepper instead of Coca-Cola for a spicier, more complex flavor with cherry and vanilla notes.
- Cherry Coke: Use Cherry Coke and add a teaspoon of almond extract for a cherry-chocolate version.
- Root beer cake: Swap in root beer for a vanilla-forward, nostalgic twist.
Ingredients
Directions
Sift together flour and sugar, stir in marshmallows and set aside.
Bring to a boil, shortening, margarine, cocoa and Coke.
Remove from heat and pour over dry ingredients.
Stir in buttermilk, baking soda and eggs.
Do not beat this cake mixture.
Pour into a greased 13×9×2-inch pan and bake in a preheated 350℉ (180℃) oven for 45 minutes or until done.
Cool 30 minutes before frosting cake.
Coke Cake Frosting: Bring margarine, cocoa and Coke to a boil.
Boil a minute, remove from heat and gradually add sugar.
Stir in pecans.
