25 minYes, chocolate soup is a real thing, and once you try it you’ll wonder where it’s been all your life.
Grated semi-sweet chocolate gets melted into milk, thickened with a touch of flour, and enriched with egg yolks for a custard-like richness that coats the spoon.
Serve it warm in small bowls on a cold evening, or chill it for a silky summer dessert. Either way, top it with fresh whipped cream and a splash of mint cordial.
Kitchen Tips
- Temper the egg yolks by stirring a little hot soup into them first. Adding them straight to the pot will scramble them.
- Grate the chocolate finely so it melts quickly and evenly into the milk.
- Keep portions small. This is rich enough to be a finishing course, not a main event.
Ingredients
Directions
Bring the milk and grated chocolate to a boil in a large saucepan.
Mix 1 or 2 tablespoons of the hot chocolate milk with the flour, and add to the soup as it boils.
Stir in the sugar and remove from the stove.
Add the egg yolks, stirring constantly, and return to low heat only long enough to warm the soup.
Serve hot or cold in small bowls as a special dessert, with a dollop of whipped cream and a few sprinkles of chocolate or mint cordial.
