Chewy Strawberry Sugar Cookies
We were given a lot of strawberries and I had to figure out what to do with them so they didn't go bad. So I came up with this recipe. I hope everyone likes it as much as my kids did. I prefer fresh strawberries over strawberry extract because it gives it a more fruitful flavor. But the extract is good as well. You decide.

1 1/2 cups white sugar
1 cup butter, softened
1 egg
3 tablespoons strawberry puree
2 3/4 cups all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup white sugar
1 teaspoon red colored sugar
Ingredients
1 1/2 cups white sugar
1 cup butter, softened
1 egg
3 tablespoons strawberry puree
2 3/4 cups all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup white sugar
1 teaspoon red colored sugar
Directions
- Preheat oven to 350ºF
- Use nonstick cookie sheet or line with parchment paper.
- Blend together butter and sugar for about 3 minutes.
- Add egg to butter and sugar blending well.
- Add strawberries or strawberry extract blending well.
- Stir in flour, baking powder, salt and vanilla with spoon.
- Scoop cookie dough by the teaspoon or tablespoon full depending what size you want the cookies. Roll into a ball.
- Add granulated sugar and red sugar crystals in a large bowl for rolling cookie dough in before baking.
- Roll each ball evenly, completely coating cookie dough.
- Place on baking sheet 1 1/2"-2" apart and lightly press each cookie down.
- Bake 10 to 15 minutes or until lightly browned.
- Let cool and eat. ENJOY!
