Baked ziti is one of those dishes that tastes like more work than it is. Two pounds of ground beef and a pound of Italian sausage brown together with onion, then meet a jar of spaghetti sauce while the pasta cooks. Twenty minutes of active work, and the oven does the rest.

Using two meats is the trick. Ground beef brings savory body, while Italian sausage smuggles in fennel, garlic, and a touch of heat that prepackaged sauce alone can’t deliver. A teaspoon of Italian seasoning and a healthy spoonful of garlic powder reinforce the herbal notes so the casserole tastes properly seasoned all the way through.

Mozzarella melts in pillowy pulls between the noodles, while a generous shower of parmesan on top crisps in the oven into golden, salty edges. Thirty to forty-five minutes is enough for the cheese to melt fully and for the pasta to soak up sauce, turning every bite uniformly tomatoey.

Pro Tips

  • Cook the pasta to al dente, not soft. It keeps cooking in the oven and overcooked pasta turns mushy under all that sauce.
  • Brown the meats hard, not just gray. Real color builds flavor and the spice notes from the sausage need heat to bloom.
  • Mix some mozzarella into the pasta before topping the rest. Cheese tucked through the casserole means stretchy bites all the way down, not just on top.
  • Let it rest 10 minutes after baking so the cheese sets and slices stay clean.

Variations

  • Add a layer of ricotta cheese blended with an egg and parsley between the pasta layers for a creamier, lasagna-like result.
  • Stir in sauteed spinach or chopped roasted red peppers for a vegetable boost.
  • Use spicy Italian sausage instead of mild for a chile-forward version.
