Directions

  1. Heat ½ tablespoon oil in a large nonstick skillet over medium heat. Stir in gnocchi and cook, stirring often, until plumped and starting to brown, about 6 minutes. Transfer to a bowl.

  2. Add the remaining ½ teaspoon oil and onion to the pan and cook, stirring, over medium heat, for 2 to 3 minutes. Add the garlic and water; cover, cooking until the onion is soft, for about 5 minutes.

  3. Stir in spinach or other greens and cook, stirring, until starting to wilt, about 2 minutes. Add the tomatoes, white beans, black pepper and bring to a simmer.

  4. Stir in the pan-fried gnocchi and top with mozzarella and Parmesan cheeses. Cook, covered until the cheese has melted and sauce is bubbling about 3 minutes.

Remove from the heat, and let cool for a few moments. Serve warm.
