No-bake cheesecake with cream cheese, sweetened condensed milk, and lemon juice in a graham cracker crust. Just chill and top with cherry or blueberry pie filling.

No oven? No problem. This cheesecake comes together without any baking at all.

Softened cream cheese gets whipped until fluffy, then blended with sweetened condensed milk, a good hit of lemon juice, and vanilla. Pour it into a graham cracker crust, slide it in the fridge, and walk away.

Three hours later you’ve got a firm, creamy, tangy cheesecake ready for a crown of cherry or blueberry pie filling.

It’s the recipe you pull out when you want something impressive with almost zero effort.

Pro Tips

  • Use real lemon juice, not the bottled stuff. The acidity is what helps the filling set without baking.
  • Beat the cream cheese on its own first until completely smooth before adding the condensed milk
  • For a firmer set, chill overnight instead of the minimum 3 hours
