Spread some pizza sauce over a few slices of toast, arrange a few marinated artichoke hearts and half fried egg over each toast. Drizzle a bit hot sauce on top. A quick, easy and tasty crostini is ready within 10 minutes.

Ingredients

4 slices bread, italian
toasted

4 tablespoons pizza sauce
store-bought or homemade
2 large eggs
pan-fried and cut into half
¼ cup artichoke hearts
marinated, drained and sliced

2 tablespoons pickled jalapenos
rings, drained

1 x red hot pepper sauce
or any hot sauce, to serve

Directions

Spread 1 tablespoon of pizza sauce over each slice of toast.

Arrange half fried egg over each toast.

Place equal amount of artichoke hearts and picked jalapenos on top of each half fried egg.

Drizzle with hot pepper sauce, and serve.

Instead of basil pesto, this time I spread some leftover homemade pizza sauce over each toast, then topped some marinated artichoke hearts, pickled jalapenos, and a pan-fried egg that I love to have on pretty much everything :D Yummo...
