This frozen banana trick turns a lone bunch on the counter into something that eats like a healthier ice cream bar. Bananas get peeled, rolled through honey thinned with lemon juice, dredged in almond slivers, and parked in the freezer until firm.

The lemon juice does two important jobs. First, it cuts the sweetness of the honey so the coating tastes balanced rather than candy-cloying. Second, it keeps the bananas from browning during the freeze, leaving the inside pale and creamy instead of murky.

Slivered almonds work better here than chopped or sliced. The thin shards stick to the honey better and stay evenly distributed when bitten through, where chopped nuts tend to fall off in clumps and slices can shatter at freezer temperatures.

Directions

Peel bananas.

In small bowl pour in honey, squeeze lemon juice in and mix well.

Roll bananas in liquid; cover banana completely.

Roll honey-covered banana in almond slivers.

Place bananas on waxed paper, freeze bananas 3 hours, then eat!
