A tasty balsamic vinaigrette tossed with watermelon and feta cheese, a fresh and scrumptious salad which works well with any grilled dish!

Ingredients

For the vinaigrette
¼ cup balsamic vinegar
1 tablespoon dijon mustard
1 tablespoon garlic
chopped
½ teaspoon kosher salt
½ teaspoon black pepper
freshly ground
¾ cup olive oil
For the salad
3 cups watermelon
cut into 2-inch cubes

1 cup feta cheese
crumbled
½ each red onion
very thinly sliced
1 x black pepper
to taste

Directions

Add vinegar and Dijon mustard in small bowl, whisk until mix.

Add garlic, salt, and pepper into mixture.

Slowly stream olive oil into dressing while whisking.

Keep dressing refrigerated until ready to use.

Combine watermelon, feta cheese, and red onion in large bowl.

Season with black pepper.

Gently toss salad with half dressing.

Refrigerate salad at least 30 minutes.

Drizzle remaining dressing over salad before serving.

Another yummy, light yet refreshing watermelon salad that I have been making in the last a few days. The balsamic-dijon vinaigrette added some depth to the salad, it was tangy and tasty. Feta cheese is always a flavorful addition that adds some delicious saltiness into the juicy and sweet watermelon. Again, I enjoyed and loved this watermelon salad too.
