The following is an outstanding recipe for Focaccia from Red Star yeast. The first time I made it, I served it with steaming bowls of seasoned pinto beans and it was great. Enjoy.

To use up an abundance of garden zucchini, try these wholesome soft-textured cookies. They are very flavorful and easy to make. I like to make cookies and put them in the freezer, they thaw quickly for unexpected guests.
Mascarpone is available at some Italian specialty food stores and some gourmet food stores.
Made this for lunch today, and it was yummy. It was like a frittata or omelette. The recipe was quite easy to follow, and I think I can use leftover chicken or turkey meat to replace pork. Have saved the recipe to my recipe box! Thanks for sharing it.
