First time to make Swedish pancakes, it was so much fun to watch this petite pancakes being browned and puffed in the pan. I made a blueberry sauce that tasted fruity, refreshing and delicious with these warm pancakes. With a cup of orange juice, our breakfast was well served.

These mini pea and sweetcorn fritters make a delicious healthy snack or breakfast which we sometimes serve with fried or poached eggs. We only ever use 1/2 teaspoon of the chilli flakes as this gives the fritters a bit of a kick, but doesn’t make them too spicy. When making these you might find that the fritters split or crack when you try to flip them over (it shouldn’t happen if you only use 1 teaspoon of the mixture). If this happens we’d recommend trying them with less mixture and making smaller fritters, this way it’s easier to flip them without breaking.
Slow cookers are so great for those times when you want a fuss-free dinner, you can literally throw everything in it and leave it all day so you have a lovely wholesome meal waiting for you at tea time. We left this stew in the slow cooker for 8 hours on a low heat but if you want it ready bit sooner than that you can turn the heat up to medium and it should be ready in about 4 hours.
