Cheese enchilada/40 recipes

Found this recipe in one of my favorite magazines, Eating Well. Loved it so much that I've tweaked it a bit to make it more vegetarian.

Pat Korth of Muskego offered a coconut variation on the peanut butter kiss cookie.

This light dinner is full of vegetables and pairs well with a simple salad in summer or a warm bowl of soup in winter. Can be made gluten-free!
