Spot this recipe on New York Time, and it sounds great. So I did a few changes, here my version of this light spinach quiche is.

I loved the mixture of the parmesan and swiss cheeses in this. I didn't realize I was almost out of rice so I ended up using 1.5c cooked rice and 0.5c cooked couscous. That turned out wonderful! I thought this would be more "tomato-y", and I used 1.5 cups of tomatoes, but it was still tasty. Also, I didn't bother to peel or seed the tomatoes.

Quiche cups are about the easiest, quickest, most portable paleo dish out there. And I can’t get enough. These bacon, apple, and kale cups are scrumdiddlyumptious, and the pear and ginger ones are pretty good too. I suppose it depends on your palette. Ginger is not my flavor of choice. Lesson learned. Yum! I added some sliced red bell pepper strips to give the dish more colour. Used fresh broccoli instead of mixed frozen veggies, and added a drizzle of sesame oil and rice vinegar in the end as well as some sesame seeds. Enjoyed the dish with a bowl of rice, so good!
