Low muffin/49 recipes

This recipe is a winner! It can be a complete meal if you put some fruits or a green leaf salad and a cup of your favorite hot beverage on the table.

We didn't have English muffins, so used rosemary-olive oil bread that we bought from Costco instead, and it worked perfectly.

Definitely deserves 5 star. This was our dinner yesterday, I only made half of the recipe, so I actually roasted the cauliflower and garlic in the small toaster oven. It did take a bit longer, but the result was great. I also added some freshly grated lemon zest, very good.

Quick, easy and delicious. Serve it as a side dish or a vegetarian main dish by using vegetable broth.

When using any other flour but white, substitute one tablespoon of gluten flour* for regular flour. You can use mixed grains, bran, flax, whole wheat flour, rye flour. Just be sure to adjust the gluten. 100% whole wheat does not turn out too well.

Crispy and crunchy. These snowballs are made with peanut butter, chunks of peanuts, raisins and puffed rice cereal. They are delicious treats for kids or grown-up :)
