To me, fish tacos are the best during summer. There is no real reason behind this, besides that I just think they taste better, and after a winter full of heavy soups and stews, there is nothing like a light and fresh tasting fish taco.
This is a cheese enchilada casserole. Beans, cheese, onions, Mexican chile sauce (not very spicy) and corn tortillas are layered in a casserole and then it's baked in the oven until bubbly.

Love this salad. We jut had some leftover wild rice, and we didn't have sweet bell pepper, so used the picked hot cherry pepper instead, also added some sliced celery and smoked tofu. It came out delicious. A very good side dish or can be a wholesome and tasty main dish as well.

Quick, easy and delicious. I only had salami, and that's what I used in the sandwich. Of course a slice of ham and smoked turkey would double the yumminess. I shredded the lettuce, and seasoned it with a bit extra-virgin olive oil, wine vinegar, salt and black pepper. The tomato slices were also seasoned with a pinch of sea salt. The sandwich was so good!
