It can be frozen in individual servings and will last for ages. I've taken a serve to university for lunch [where i have access to a microwave] about once a week for the last 8 weeks - all from the one batch. Fantastic :D
This Punjabi dish, with some variation in spices, is eaten over all of northern India. Paneer is a fresh milk cheese with an interesting, slightly chewy consistency. It's easy to make, but requires planning ahead. You can substitute a diced 6- or 8-ounce cake of pressed tofu for it in this recipe.

About half of the beans I used were chili beans. And I used a Guinness beer. I (roughly) seeded the jalapenos and this was surprisingly still spicy. A cheap cut of beef works quite well; the beef chunks get so tender and this is an overall delicious dish. I froze half of it.
Had some fresh bell peppers, mushrooms, pizza sauce, scallions, and whole wheat tortilla, made up this Mexican Pizza for breakfast. Instead of mozzarella or Mexican cheese, I used Swiss cheese. The pizza came out super tasty and quite filling, and I also topped a pan-fried egg. Yum!
So quick and easy to put together, and it tastes delicious with a good amount of flavorful sauce that's perfect with a bed of rice. Don't have Chinese cabbage? Use bok choy or other similar leafy greens, or even broccoli instead.
Delicious quesadillas are made with black beans and avocado.

Very tasty indeed! Super quick and easy to prepare yet somewhat sophisticated and rich tasting. A wedge of lemon went nicely with the quesadillas.
