Beef short ribs baked with garlic, onions and carrots in a barbecue sauce. Tender, tasty and succulent.
Very nice flavor and easy to make. I drizzled some of the marinade over the salmon during the covered cooking time and used it as a sauce. I might add some chopped fresh ginger to the marinade next time. Cooking time was perfect.

Instead of cooking in the pan, this omelette was baked in the oven. It took no time to make, and very easily scaled down. Sean made a 1-serving sized omelette, baked in a 8-inch skillet, and it turned out great. Tasty and filling!
This is one of my old tried and true recipes. The original recipe card is so faded that I can hardly read it!
There are many variations of classic Mexican tortilla soup. In this vegetarian version (feel free to substitute chicken for the tofu for a non-veg version) the rich broth is flavored with earthy ancho (New Mexican) chillies and made more filling by adding some kale that retains it's texture well in a hot soup.
Grilled or broiled asparagus is tender, crispy and full of flavor, drizzling some fresh homemade dressing, along with some other grilled seasonal vegetables. An excellent side-dish with barbecued meats. Simply delicious!
Add some fish to your summer diet with this savory dish that will have you and your family licking your lips.
Roasted fennel and zucchini are loaded with deliciousness. White beans not only give the dish protein boost, but also add some creaminess that's packed with health benefits. An easy and hearty dinner can be served within no time.
I use crushed Ritz crackers instead of bread crumbs and add 2/3 cup of shredded sharp Cheddar. A simple gravy to go along with the meatloaf can also be made using another packet of soup mix, 2 Tbs. flour and 2 cups of cold water. Simmer until thickened.
Creamy and tasty tzatziki sauce is quick and easy to make, and packed with flavor. A delicious addition to accomplish any meat course.
This is one of our favorites. I add more lemon (yes, with the rind!). It's sooo good! Not bitter. I looked online to find it because I misplaced my "Award winning recipes" cookbook in the move. I use vinegar instead of wine (about half the amount) because we don't stock wine.
Accompany with a Greek-style salad sprinkled with feta cheese and olives!
A very easy and fairly quick one pot meal that's perfect when you're in a hurry. Chunks of chicken and rice seasoned with star anise and Chinese five spice powder. Yum.
