Finnish Summer Soup recipe

This is actually fairly easy to make, the only time consuming part was peeling the eggplant and chopping vegetables.

So flavorful. Loved the topping varieties, and they went deliciously well with the soup. Will recommend this recipe.

The thickness of the soup is somewhat unpredictable, so stand by with a bit of water or stock to thin it down if necessary.
