Velvet Mashed Potatoes

3 lb potatoes cut into pieces
1/2 -3/4 c milk
1/2 package cream cheese or the whole package (I use half)
1/3 c. butter, softened
1/2 tsp salt
dash of pepper
garlic clove, minced (optional)

3 lb potatoes cut into pieces
1/2 -3/4 c milk
1/2 package cream cheese or the whole package (I use half)

Directions
Heat 1 inch water to boiling in 3 qt saucepan. Add potatoes. Cover and heat to boiling.
Cook 20 to 25 minutes or until tender; drain. Shake pan with potatoes over low heat to dry.
Mash potatoes until no lumps remain.
Beat in milk in small amount (amounts of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used).
Add cream cheese, butter, salt, and pepper. Beat vigorously until potatoes are light and fluffy.
If you want to, bake your mashed potatoes and sprinkle cheddar cheese on top for a nice crust.
