Directions

Mix together the diced potatoes, onion, Parmesan cheese, chives, salt and black pepper together in a bowl.

Transfer to one or more packets of double sheets of greased aluminum foil. Dot with butter and fold up the packet to seal well.

Grill over medium-heat or bake in a 400 degree F oven for about 30 to 40 minutes, turning once, until the potatoes are tender.

Open the foil packet (watch for steam) and sprinkle the shredded cheeses and crumbled bacon over the potatoes. If needed return to the grill or oven to melt the cheese as desired.

Serve directly from the packet for easy cleanup.
