Heat a large skillet with one tablespoon of oil or fat of choice over medium-high heat. Season pork chops with salt and pepper. Brown the six pork chops well and reserve.
In the same skillet, sauté the sliced onion and one green pepper in meat drippings.
Add the can of stewed tomatoes and one package of Italian Seasoning Mix.
Return the pork chops to the skillet, combine them all together, and simmer until the sauce is of the desired consistency and the chops are tender.
