The lemon juice is the quiet hero. Its acid reacts with the sweetened condensed milk and thickens the filling until it sets firm enough to slice, no baking and no gelatin needed. That same tang also balances the condensed milk so the cheesecake tastes bright instead of cloyingly sweet, so do not be tempted to cut it back.
Soften the cream cheese fully before mixing so the filling whips up smooth and lump-free. Then chill it until completely set, at least a couple of hours and ideally longer, before slicing. Top it with fruit, and you have a fuss-free dessert anyone can pull off.
