Ingredients

1 each english cucumber
cut into matchsticks

1 each shallots
chopped, or half red onion

1 tablespoon chili pepper flakes
Korean style, or 1/2 teaspoon red pepper flakes

½ tablespoon rice vinegar
or to taste
1 teaspoon sugar
or to taste
½ tablespoon sesame seeds
toasted
1 x salt and black pepper
to taste

Directions

Add the cucumber with the rest of the ingredients in a large bowl.

Mix until the cucumber is evenly and well coated.

Season to taste with salt and black pepper.

Serve or keep it in the frige until ready to use.

So easy to make, and this cucumber salad goes well with almost everything.

It's a little bit sweet, sour and spicy, you can adjust the seasonings according to your own taste, of course.

The salad can be made in advance, cover it up and put in the refrigerator until meal is ready.

Korean chili flakes and toasted sesame seeds can be found in all the Asian or Korean grocery stores.

Great & easy, quick as well as very inexpensive to prepare. Light and healthy during hot summer days. Excellent for picnics.
