Santa Claus cookies are the kind of decorating project that turns December baking into a family activity. The cookie base is a soft, light drop cookie with a surprising hit of fresh lemon zest that keeps them from going one-note sweet. Scoop spoonfuls onto baking sheets, bake 20 minutes until the edges turn faint gold, and you have a blank canvas waiting for frosting.

The decoration is where personality takes over. Red frosting for the hat, white frosting piped thick or shredded coconut for the beard and fluffy hat trim, chocolate chips or candy eyes for the face, and a red gumdrop or candy heart for the nose.
