2 hrsFour ingredients and no oven. That’s all it takes for these no-bake chocolate muesli bars. Honey, butter, and semi-sweet chocolate melt together over a double boiler, then get stirred into muesli cereal, pressed into a pan, and chilled until firm.
The chocolate and honey do double duty as both flavoring and binding agent. As the mixture chills, the chocolate sets and holds the muesli together in a crisp, chewy slab that cuts cleanly into squares or triangles.
Reserving a quarter cup of muesli to sprinkle on top before chilling gives the surface a crunchy, textured finish and makes each piece look more polished.
Kitchen Tips
- Melt the chocolate, butter, and honey gently over simmering water. Direct heat can scorch the chocolate and make it grainy.
- Press the mixture firmly and evenly into the pan. Loose spots crumble when you cut.
- Chill for the full 1 to 2 hours. Cutting too early results in a messy, sticky bar that falls apart.
- Store in an airtight container in a cool spot. They soften at room temperature in warm weather.
Variations
- Use dark chocolate instead of semi-sweet for a richer, more intense flavor.
- Stir in a tablespoon of peanut butter with the melted chocolate for a nutty twist.

Grease a shallow 11×7 inch baking pan with butter, line bottom with parchment or waxed paper.
Place honey, butter and chocolate together in a large bowl placed over a pan of gently simmering water.
Stir until butter melts, remove from heat.
Stir all but ¼ cup of muesli into honey mixture.
Spread in prepared pan, smoothing top with the back of a spoon.
Sprinkle remaining muesli evenly on top, pressing gently into surface of mixture.
Refrigerate 1 to 2 hours or until set. Carefully remove muesli mixture from pan; remove paper.
Cut into 8 squares. Cut each square in half to make 2 triangles.
Arrange neatly on a serving dish or store in an airtight container in a cool place for 2 to 3 days.
