Mozzarella Tomato & Basil Salad

Give your meal a new look by adding this simple salad that combines classic flavors of creamy fresh mozzarella, tomatoes and basil.

Ingredients

½ pound mozzarella cheese
fresh or buffalo if possible
½ cup basil
fresh, chopped

4 tomatoes
fresh ripe beefsteak or heirloom
¼ cup vinegar
red wine or balsamic
½ teaspoon salt
½ cups olive oil, extra-virgin
good quality (more or less to taste)
¼ teaspoon black pepper

Directions

Slice cheese to about the same thickness you will slice the tomatoes.

Slice tomatoes.

On large platter, arrange alternate slices of cheese and tomatoes.

Sprinkle with basil.

DRESSING:

Combine vinegar, salt, pepper and olive oil in a small bowl or measuring cup.

Drizzle over tomatoes and cheese.

Let marinate at room temperature for up to 1 hour before serving.

i switched out the vinegar for fresh lemon juice and seasoned w/salt, garlic & onion powder also; very delish!
