Directions
First, in a mixing bowl, whisk together the flour, yeast, sugar, milk powder, and salt.
If using a stand mixer, transfer the dry ingredients to the mixing bowl with the dough hook attached.
Then, add water and half of the beaten egg and continue to mix. Finally, add butter and knead the mixture by hand until it becomes smooth and elastic, which should take around 10 minutes. If using a stand mixer, use a medium-low speed setting for approximately 5 minutes.
Next, cover the dough and let it rise in a warm place for about 30 minutes.
After that, punch the dough down and divide it into 20 round balls, allowing them to rise for another 10 minutes.
Now, take out each ball and shape it into an oblong bun that resembles a hot dog, making it longer than it is wide. The dough will want to spring back and try to form a ball again, so consider this when shaping.
Place the shaped buns on a baking tray that's either greased or covered with a sprinkling of cornmeal. Let them rise for 35 minutes.
Brush the remaining beaten egg over the dinner rolls and sprinkle Everything Bagel Seasoning, poppy seeds, or sesame seed over the top as desired.
Finally, bake the buns at 375℉ (190℃) for 15 to 20 minutes or until they turn golden brown and produce a hollow sound when tapped.
