Malpua is prepared in sugar syrup, this traditional Indian sweet dish is usually prepared during the festival of Holi. So, follow this recipe and prepare scrumptious Malpuas at your home!

Ingredients

Plain Flour (Maida) – 1 cup
Mawa – 1/2 cup
Cardamom Powder – 1/2 tsp
Saunf Powder – 1/4 tsp
Almonds (blanched, peeled & slivered) – 8-10
Pistachios (sliced) – A few
Saffron – 7-8 strands
Milk – 2 cups
Ghee – 1/2 cup for frying
Salt – A pinch
Sugar – 1 tbsp
Rose Petal

To prepare the sugar syrup:

Sugar – 3/4 cup
Water – 1/3 cup
Saffron – 4 strands
Cardamom Powder – 1/4 tsp

Saunf Powder – 1/4 tsp
Almonds (blanched, peeled & slivered) – 8-10
Pistachios (sliced) – A few
Saffron – 7-8 strands
Milk – 2 cups
Ghee – 1/2 cup for frying
Salt – A pinch
Sugar – 1 tbsp
Rose Petal

To prepare the sugar syrup:

Sugar – 3/4 cup
Water – 1/3 cup
Saffron – 4 strands
Cardamom Powder – 1/4 tsp

Directions

  1. Boil the milk and simmer it till it reduces to somewhere around 1 1/2 cups. 2.Once done, turn off the flame and let the milk to cool down.
  2. Take a bowl and add khoya and half of the boiled milk into it.
  3. Mix the khoya and milk till it becomes a smooth concoction.
  4. Add cardamom powder, saunf powder, sugar, salt and a few strands of saffron to the mixture and blend well. 6.Add half of the flour to the mixture and blend it, till there are no lumps.
  5. Add the remaining flour to the bowl and mix it well.
  6. Add the milk to the mixture till it gives a smooth flowing batter.
  7. Go on mixing the mixture for 3-4 minutes and keep it aside. 10.To prepare the sugar syrup, put sugar and water in a separate bowl and allow the sugar to melt.
  8. Simmer the sugar syrup for 10-12 minutes and let it cook on low medium flame.
  9. Add cardamom powder to the syrup and turn off the flame.
  10. Set the syrup aside.
  11. Take another small pan and heat ghee on low medium flame for 3-4 minutes.
  12. Take a small ladle full of batter and pour it in the center of the pan, taking enough care that you do not spread it, and let the batter spread on its own. 16.Allow the pancake to cook until the sides turn golden brown. 17.Then, flip the side and cook on medium flame for another 2-3 minutes or till it turns golden brown. 18.With the help of a slotted spoon, drain the Malpua and put it in the sugar syrup instantly for about half a minute.
  13. Take the Malpua out of the sugar syrup and let the syrup drain off.
  14. Then place the Malpua on a serving plate.
  15. Garnish it with chopped pistachios almond and rose petal.
