45 minHusband’s delight is the kind of casserole that has been on Midwestern church-supper tables since the 1950s, and it’s a workhorse for a reason. Layered like lasagna but built with egg noodles, it pairs a tangy tomato-beef sauce with a rich cream cheese and sour cream filling that turns the whole thing into something between a stroganoff and a baked pasta.
The cream cheese mixture is the secret ingredient. Softened to a smooth paste with sour cream, it spreads between the noodle layers and melts into a silky filling as the casserole bakes. A teaspoon of sugar in the meat balances the acid in the tomato sauce; small but worth it.
The two-cheese topping (a sharp cheddar and grated Parmesan) gives the casserole its golden, crackly crown. Skip the urge to overload on noodles. The recipe specifically warns that too many noodles dry the dish out, so let the rich meat and cream cheese layers shine.
Pro Tips
- Soften the cream cheese fully before mixing with sour cream. Cold cream cheese leaves lumps that don’t smooth out in the oven.
- Use lean ground beef (85/15) and drain off the grease before mixing with sauce. Excess fat pools on the casserole top.
- Cook noodles to just-tender (al dente). They finish cooking in the oven; soft noodles turn mushy.
- Let the casserole rest 10 minutes before serving so the layers set and slice cleanly.
Variations
- Add a layer of sauteed mushrooms between the meat and cream cheese for extra depth.
- Swap egg noodles for wide pappardelle or rotini for a chewier texture.
- Top with crushed Ritz crackers or panko in the last 5 minutes for a crunchy topping.
