Directions
Preheat oven to 350℉ (180℃) F (175 degrees C).
Lightly coat baking sheet with cooking spray or grease with butter.
Add the butter and the pudding mix in a big bowl with an electric mixer, cream until light, fluffy and smooth.
Blent in the baking mix, egg and sugar until well blended.
On a lightly floured working surface or cutting board, roll out the dough to ⅜ inch to ½ inch thickness and use a shamrock cookie cutter to cut out the cookies.
Put the cookies on the prepared baking sheet and bake about 10 minutes or until lightly browned on the edges.
Allow cookies to cool completely on wire rack.
Frost with green colored icing if needed.
Let the frosting set completely and store at an air-tight container.
