Directions
In a small bowl, whisk together the vegetable oil, balsamic vinegar, soy sauce and crushed peppercorns. Place the salmon fillets in a suitable shallow dish and pour the mixture over. Marinate for 30 minutes.
Remove the salmon from the marinade, reserve. Heat the olive oil in a 12-inch non-stick skillet until just smoking then cook the salmon, skin side down, for 2 minutes. Flip over the salmon fillets, pour the reserved marinade and cook for 2 more minutes, or until the fish is just cooked through. Base frequently with the pan juices.
Turn the salmon over once again, sprinkle with the green onions and serve immediately with rice (if desired).
