20 minState fair funnel cakes, made at home in 20 minutes.
Mix the four dry ingredients once and store them. Whenever the craving hits, combine 1 cup of mix with an egg and milk, load it into a funnel, and pour in a spiral into hot oil. It fries in about 2 minutes, comes out lacy and golden, and gets dusted with powdered sugar or a cinnamon-sugar shake.
The cinnamon in the mix is a small but real difference from plain funnel cake - you’ll taste it.
Kitchen Tips
- Keep your finger over the funnel tip while filling, then release slowly over the oil for a controlled pour
- Move the funnel in a steady spiral for the classic lacy shape; the pattern matters
- The oil must be fully up to temperature before you start - test with a drop of batter, it should sizzle immediately
Ingredients
Directions
Combine all ingredients, stirring well.
Store in airtight container.
To make Funnel Cakes: Pour vegetable oil into a round heavy pot to a depth of one inch.
Heat oil to 360 degrees over medium-high heat (may need to be higher).
In a small bowl, combine 1 egg with ¾ cup milk.
Add 1 cup Funnel Cake mix and beat with fork until smooth.
Hold your finger under funnel opening, pour about ¼ cup of batter into funnel.
Allow batter to pour from funnel into hot oil, moving funnel in a circle to form a spiral shape.
Fry 1 minute, turn cake, and continue frying until golden brown.
Remove to paper towels to drain. Sprinkle with confectioners sugar or a mixture of cinnamon and sugar.
