Fried Potato and Bacon Salad

Crispy pieces of fried potatoes with bacon pieces and more! Served warm but can eat cold too.

Ingredients

4 brown baking potatoes
1/2 cup mayo
3 tbsp mustard
1/2 white onion chopped
4 slices of thick sliced bacon
salt
garlic powder
pepper
paprika

Directions

Slice potato into rounds, slice rounds into small square pieces. Cook bacon in frying pan until crispy then set aside. Place potatoes in bacon grease and sprinkle seasonings to taste. Fry for at least 10 to 15 minutes while flipping every 3 minutes or so. You want the potato pieces to be crispy on outside and soft on inside. While cooking, slice onion into small pieces. Then take bacon strips and place in chopper grinder until broken up small bacon bit like pieces. When potatoes are done drain and put in bowl. Put mayo, mustard, onions, and bacon bits and stir until mayo and mustard are smoothed out. Great side dish, tastes amazing while warm. You can also eat cold. Enjoy!
