The sauce starts simple: butter melted with brown sugar and a tablespoon of lemon juice. That lemon is doing more than adding flavor. The acid keeps the bananas from turning sickly sweet and adds a brightness that balances the caramel.
Cook the bananas just one to two minutes per side. You want them warmed through and slightly softened, not mushy. They should hold their shape when you plate them. Raisins and walnuts go in at the end, soaking up the buttery sauce and adding chewy sweetness and crunch in every spoonful.
The brandy flambe is the grand finale. Warm it first so it ignites reliably, pour it over the pan, and let the flame burn off the alcohol while it deepens the sauce into something smoky and concentrated.

- Use bananas that are ripe but still firm. Brown-spotted, overripe bananas will disintegrate in the pan
