3 hrsThis is the classic New England brown bread, the dark, dense, slightly sweet loaf that historically lived alongside Boston baked beans on Saturday night supper tables. The unusual cooking method (3 hours of steaming, no oven involved) goes back centuries to a time when most homes had open hearths but no reliable ovens. The slow steam produces a moist, almost pudding-like texture you can’t replicate any other way.
Graham flour is what gives this bread its signature dark color and slight nuttiness. It’s a coarse whole-wheat flour with the wheat germ and bran left in. Don’t substitute regular whole wheat or the bread loses its character. Most natural food stores stock it.
The sour-milk-and-sweet-milk combination is old-school baking science. The acid in soured milk reacts with the baking soda for lift; the sweet milk adds richness. If you don’t have sour milk on hand, add 1 tablespoon of vinegar or lemon juice to fresh milk and let it sit 5 minutes before using.
A traditional brown bread mold (or any clean coffee can or tall steaming tin) gives the loaf its iconic cylindrical shape. Cover the top tightly with foil, place in a deep pot with simmering water reaching halfway up, and let it steam.

- Grease the pan generously with butter or shortening. The bread sticks otherwise and tears when unmolded.
- Keep the water at a gentle simmer, not a rolling boil. Aggressive boiling water will jostle the bread and create a misshapen loaf.
- Check the water level every hour. Three hours of steaming will evaporate a significant amount; top up with hot water as needed.
- Toothpick test at 2 ½ hours. The bread is done when the toothpick comes out clean.

- Replace raisins with chopped dates or dried cranberries.
