1⅕ hrsBread machine walnut bread is the easiest way to get a fresh, nutty loaf out of your kitchen with about 5 minutes of active work. Dump the dry ingredients into the pan, pour in the water, drop the walnuts in, snap the yeast into the holder, and let the machine handle the rest. Done.
The ingredient order matters more than people realize. Liquids on the bottom and yeast separated in the holder is what keeps the yeast inactive until the machine wants it. If yeast touches water or salt before the kneading cycle, it activates early or dies, and you end up with a dense brick.
Dry milk powder is the small ingredient that punches above its weight. It tenderizes the crumb and adds richness without the moisture issues that come with using fresh milk. Don’t skip it; substituting fresh milk for the water changes the hydration math.
The quarter cup of chopped walnuts is the right ratio. More than that and the dough struggles to rise, less than that and you get a few stray nuts in slices. Chop them somewhat fine, big walnut halves can puncture the dough as it rises and create air pockets.
Use rapid or basic bake depending on your time. Rapid gets you bread in about an hour but with slightly less flavor development; basic takes 3 to 4 hours but gives you a better crust and fuller yeast flavor.

- Toast the walnuts on a dry skillet for 5 minutes before chopping. Untoasted walnuts taste flat in baked goods.
- Use bread flour, not all-purpose. The higher protein content gives proper structure for yeast bread.
- Check the dough during the first knead; it should form a smooth ball. Add a tablespoon of water if dry, a tablespoon of flour if too sticky.
- Cool fully on a wire rack before slicing. Hot bread tears; cooled bread cuts clean.
