They’re a natural fit for clear soups and broths, adding substance without overpowering the broth’s flavor. But they’re just as good pan-fried in butter and tossed with green beans as a simple side dish.

Kitchen Tips
- Keep the broth at a gentle simmer, not a rolling boil. Vigorous bubbling breaks the noodles apart before they set.
- The batter should be thin enough to drop from a teaspoon but thick enough to hold a rough shape. If it runs off the spoon like water, add a bit more flour.
- For a richer noodle, use an extra egg yolk in the batter. It adds color and a silkier texture.
