60 minCola cake is the Southern church-cookbook classic that turns a can of soda into a fudgy, marshmallow-streaked chocolate sheet cake. The cola does double duty: caramel notes deepen the chocolate flavor and the carbonation helps the cake rise tender and light.
Melted marshmallows go right into the batter and create gooey, half-melted ribbons throughout the crumb. Buttermilk brings a subtle tang that keeps the sweetness in check.
Pro Tips
- Stir the marshmallows over low heat only. High heat scorches them and seizes the butter.
- Use real cola, not diet. The sugar is part of the recipe’s chemistry; sugar substitutes throw off both texture and flavor.
- Buttermilk should be room temperature. Cold buttermilk shocks the warm chocolate-cola mixture and the batter clumps.
- Beat on low after adding the chocolate-cola mix. High speed whips in air and gives you a domed, dry cake instead of the dense fudgy texture this style is known for.
- Don’t overbake. Pull the cake when the center barely springs back. Carryover heat finishes it on the rack.
Variations
- Pour warm cola-cocoa frosting (butter, cocoa, cola, powdered sugar) over the cake while still warm for the full Southern treatment.
- Stir in 1 cup of chopped pecans for that classic Texas sheet cake texture.
- Swap regular cola for cherry cola and add 1 teaspoon almond extract for a Black Forest spin.
