Delicious Carrot Cake Cookies (Vegan and Gluten-Free)
Make sandwich cookies; just spread some coconut whipped cream on a cookie and sandwich with another cookie!

Preheat your oven to 180°C (350°F).
Chop the walnuts. Grate the carrots and orange rind.
In a mixing bowl combine the applesauce, coconut oil, honey and cinnamon.
Add the carrots and orange zest and mix again.
Add the coconut, walnuts, and mix again.
Add the baking powder and oat flour and rolled oats. Mix everything together.
Spoon 1 heaping tablespoon on a baking tray covered with parchment paper and flatten and shape. (Approximately 18 cookies total.)
Bake for 20-25 mins until golden brown around the edges.
Cool on wire rack.
