Cold and Spicy Udon Noodles
Thick udon noodles with a spicy Asian dressing that's easy to make and ready when you are.
Ingredients

cilantro
finely chopped |

tahini (sesame paste)

miso paste

|
1 | teaspoon |
sesame oil

|
3 | tablespoons |
orange juice
|
|
½ | teaspoon |
red pepper flakes

scallions, spring or green onions
finely chopped |

sweet red bell peppers
minced |

4 | cups |
udon noodles
drained, rinsed, drained again |

Directions
In a large bowl, combine tahini (sesame paste), miso, sesame oil, orange juice, red pepper flakes and cilantro.
Toss in green onions, bell pepper and noodles.
Cover bowl with plastic wrap, and chill 3 hours or overnight.
Serve cold.
