30 minThis no-bake cheesecake is all about the chill. A buttery graham cracker crust gets a quick bake to set it firm, then a fluffy cream cheese filling goes in and firms up in the fridge over a few hours. No water bath, no cracking, no fuss.
The filling is lighter than a traditional baked cheesecake. Whipped dessert topping folded into sweetened cream cheese creates an airy, mousse-like texture that melts on your tongue. The cherry pie filling spooned over the top once it’s set adds a glossy, fruit-loaded finish with that classic cheesecake-and-cherry pairing.
Let it chill until the filling is truly firm before adding the cherry topping. Rushing it means the cherries sink into a soft filling instead of sitting cleanly on top.
Kitchen Tips
- Soften the cream cheese completely before mixing. Cold cream cheese creates lumps that won’t smooth out once the topping is folded in.
- Press the crust firmly and evenly, especially in the corners. A loose crust crumbles when you cut slices.
- Chill for at least 4 hours, overnight if you can. The longer it sets, the cleaner your slices will be.
Variations
- Swap cherry pie filling for blueberry or strawberry pie filling for a different fruit topping.
- Add a teaspoon of vanilla extract to the cream cheese mixture for extra depth.
- Drizzle melted chocolate over the cherry topping for a black forest-inspired finish.
