Steamed cauliflower tossed with sautéed mushrooms, onions, Parmesan, and breadcrumbs, then baked until golden. A simple, satisfying vegetarian side dish in 40 minutes.

40 minSometimes the best vegetable dishes are the simplest ones with just enough cheese to make them irresistible.
Cauliflower steams until tender while mushrooms and onions brown in butter in a separate pan. Toss in grated Parmesan and breadcrumbs, combine everything in a baking dish, and give it a few minutes in the oven to meld.
The Parmesan and breadcrumbs cling to each floret, giving you little pockets of salty, crunchy goodness in every bite. The mushrooms add an earthy depth that makes this feel like much more than a side dish.
Pro Tips
- Steam the cauliflower just until fork-tender, not mushy. It gets a few more minutes in the oven, so err on the side of slightly underdone.
- Use freshly grated Parmesan rather than the pre-grated stuff in a can. It melts better and has more flavor.
- For extra crunch, broil for the last minute instead of baking. Keep a close eye on it; breadcrumbs go from golden to burnt in seconds.

Cut cauliflower into bite-sized pieces, place in a steamer and steam to desired tenderness, about 10 to 15 minutes.
In a frying pan, sauté onions and mushrooms in butter until brown (about 5 minutes).
Remove from heat and stir in the parmesan and bread crumbs.
Mix well.
Put the steamed cauliflower in a baking dish and toss with the mixture in the frying pan.
Bake for 4 to 5 minutes at 350℉ (180℃).
