Ingredients

4 each beets
cooked, diced or grated

1 teaspoon cardamom pods
ground, plus more for garnishing
3 tablespoons mints
freshly chopped

450 millilitres greek yogurt
*
1 teaspoon honey
or sugar
½ each lemon
juice
1 x salt
to taste

Directions

Mix beets, cardamon and 2 tablespoons of mint.

Whisk yogurt, honey salt and a squeeze of lemon juice.

Layer beet and yogurt in a serving dish.

Garnish with remaining mint and a sprinkle of cardamon.
