This is excellent as a topping for ice cream. I did, however, take it to another level by making this as a filling for chimichangas. Prepare the bananas as directed. Meanwhile, soften 2 large flour tortillas in the microwave briefly to make pliable. Spoon half of the mixture evenly on the middle of each tortilla and roll up burrito style, tucking in the ends and securing the bottoms with toothpicks, if necessary. Heat 1 cup of vegetable or canola oil in a medium-large skillet. Pan fry the chimis for a minute or two, until lightly browned. Drain on paper towels and serve hot with vanilla ice cream or whipped cream.
