A Layered Brownie Dessert with Banana Cream and Crunch

This is the dessert that takes a boxed brownie mix and turns it into a layered showstopper. Chopped peanuts go into the brownie batter for crunch, then the cooled square gets topped with sliced bananas, a fluffy vanilla pudding cream, and a generous sprinkle of more peanuts and grated chocolate.

The pudding-and-whipped-topping technique is the trick. Whisking instant pudding mix into milk just until it begins to thicken, then folding in whipped topping, creates a stable, sliceable cream that holds its shape over the bananas without weeping or sliding. Move quickly once the pudding starts to thicken; it sets up fast.

Freshly sliced bananas on top of the brownie before the pudding goes on is the layer that lifts this from generic to memorable. Choose just-ripe bananas; overripe ones brown and turn mushy under the cream within hours.

Pro Tips

  • Cool the brownie completely before adding bananas. Warm brownies turn the bananas brown and the pudding will weep liquid into the cake.
  • Toss the banana slices in a little lemon juice if you’re not serving right away. It slows the browning.
  • Use a fine-grain Microplane to grate the unsweetened chocolate. Coarse shavings look chunky on top.
  • Serve within 24 hours for best texture. The bananas soften over time and the brownie picks up moisture from the cream.

Variations

  • Swap peanut butter chips into the brownie batter for a doubled peanut hit.
  • Use chocolate pudding mix instead of vanilla for a fudgier, deeper layer.
  • Top with fresh strawberries or raspberries alongside the bananas for color and tartness.
