Simple baked oatmeal with mashed banana and powdered milk. Just four ingredients, 25 minutes, and breakfast for two is served warm from the oven.

Four ingredients. Twenty-five minutes. Breakfast that actually feels like a hug.

This baked oatmeal is about as stripped-down as it gets: oats, mashed banana, powdered milk, and hot water stirred together and baked until warm and set.

The banana adds natural sweetness so there’s no added sugar involved.

It’s diabetic-friendly, vegetarian, and the kind of recipe that works just as well for meal prep as it does for a lazy weekend morning.

Variations

  • Coconut Raisin: Skip the banana and add 2 tablespoons raisins and ¼ cup shredded coconut with a sprinkle of cinnamon.
  • Nut Butter Drizzle: Swirl a spoonful of peanut or almond butter on top before baking for extra protein.
  • Berry Loaded: Fold in a handful of fresh or frozen blueberries before baking for bursts of juicy tartness.

Kitchen Tips

  • Use the ripest banana you have. Brown spots mean more sweetness and a softer texture.
  • Don’t overbake or the oatmeal dries out. Pull it when the center is just set but still slightly soft.

Directions

Preheat oven to 350℉ (180℃).

Combine ingredients in a small casserole dish and back for 20 minutes.
