Some breakfast ideas look simple and deliver exactly that. This one is a toasted raisin English muffin topped with fresh banana quarters, drizzled with melted margarine and warmed apricot preserves, dusted with cinnamon, and slid under the broiler until hot and slightly caramelized.

The broiler is the move that makes this more than just banana on toast. The heat softens the banana, edges it toward caramelized sweetness, and warms the apricot glaze into the surface of the fruit. The raisin muffin underneath adds its own sweetness and pairs naturally with the fruit on top.

At 86 calories for two halves, this fits comfortably into a lighter eating plan while still feeling like something intentional rather than a bowl of plain cereal.

Kitchen Tips

  • Warm the apricot preserves first so they brush on easily and flow into the banana rather than sitting in clumps.
  • Watch the broiler closely. There’s only a 5-minute window and the difference between caramelized and burnt is narrow under a hot broiler.
  • Use a banana that’s just ripe, with some firmness left. An overripe banana will collapse under the broiler heat.
  • Slice the banana lengthwise as directed so it lies flat on the muffin and broils evenly.

Variations

  • Honey instead of apricot: Drizzle with a teaspoon of honey in place of apricot preserves for a simpler, more neutral sweetness.
  • Nut topping: Scatter a few chopped walnuts or pecans over the banana before broiling for crunch and a small amount of extra protein.
